Oatmeal & Dates Dessert Bars

Ingredients

  • 1 cup pitted dates (soft, Medjool work best)
  • 1 cup rolled oats
  • ½ cup chopped nuts (optional: almonds, walnuts, pecans)
  • 2–3 tbsp nut butter (peanut, almond, or cashew)
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: 1–2 tbsp honey or maple syrup for extra sweetness

Instructions

  1. Prep dates: If your dates are a little dry, soak them in warm water for 10 minutes, then drain.
  2. Blend base: In a food processor, combine dates, nut butter, vanilla, and salt. Process until it forms a sticky paste.
  3. Mix in oats & nuts: Transfer the date paste to a bowl and stir in oats (and nuts if using). If too dry, add a bit more nut butter or 1 tsp water.
  4. Form bars: Line a small pan with parchment paper. Press the mixture firmly into the pan, making it even.
  5. Chill: Refrigerate for 30–60 minutes until firm.
  6. Slice & serve: Cut into squares or bars. Keep refrigerated for up to a week.

Optional Variations

  • Chocolate twist: Add 2 tbsp cocoa powder or sprinkle chocolate chips.
  • Spiced version: Add ½ tsp cinnamon, ¼ tsp nutmeg, or ¼ tsp cardamom.
  • Coconut boost: Mix in 2 tbsp shredded coconut.
