Here’s a simple, perfect Roasted Potatoes with Garlic and Thyme—crispy on the outside, fluffy inside, and incredibly flavorful. Works with any type of potato!


🥔✨ Roasted Potatoes with Garlic & Thyme

Ingredients

  • 2 lbs potatoes (Yukon gold, red, or russet), cut into 1–1½ inch pieces
  • 3 tablespoons olive oil
  • 4–6 garlic cloves, minced (or smashed whole for milder flavor)
  • 1–2 teaspoons fresh thyme leaves (or ½ teaspoon dried thyme)
  • 1 teaspoon salt (more to taste)
  • ½ teaspoon black pepper
  • Optional: ½ teaspoon paprika or smoked paprika
  • Optional garnish: fresh parsley or extra thyme

Instructions

1. Preheat

  • Heat oven to 425°F (220°C).
  • Line a baking sheet with parchment for easy cleanup.

2. Season the Potatoes

  1. In a large bowl, toss potatoes with olive oil.
  2. Add garlic, thyme, salt, pepper, and optional paprika.
  3. Toss until everything is well coated.

3. Roast

  1. Spread potatoes in a single layer—don’t overcrowd or they won’t crisp.
  2. Roast 25–35 minutes, flipping halfway through.
  3. They’re done when golden and crispy on the edges and tender inside.

4. Serve

  • Taste and add a pinch more salt if needed.
  • Sprinkle with fresh parsley or thyme for a bright finish.

⭐ Tips for Perfectly Crispy Potatoes

  • Use high heat (425°F is ideal).
  • Make sure the potatoes are dry before seasoning.
  • Flip only once to let them brown properly.
  • For extra crispiness, toss potatoes with 1 tablespoon of cornstarch before roasting.
