This is the full, from-scratch version: rich meat sauce, creamy cheese filling, perfectly layered pasta, and that golden-bubbly top. It’s based on the famous all-time favorite (originally by John Chandler on Allrecipes), with a few tweaks that make it extra flavorful and foolproof.

Ingredients

🍖 For the meat sauce:

  • 1 lb (450 g) sweet Italian sausage
  • ¾ lb (340 g) lean ground beef
  • ½ cup minced onion
  • 3 cloves garlic, minced
  • 1 (28 oz / 800 g) can crushed tomatoes
  • 2 (6 oz / 170 g) cans tomato paste
  • 2 (6.5 oz / 185 g) cans tomato sauce
  • ½ cup water
  • 2 tbsp sugar
  • 2 tbsp chopped fresh parsley (or 1 tbsp dried)
  • 1½ tsp dried basil
  • 1½ tsp salt (divided)
  • 1 tsp Italian seasoning
  • ½ tsp fennel seeds (optional but authentic)
  • ¼ tsp black pepper

🧀 For the cheese filling:

  • 16 oz (450 g) ricotta cheese
  • 1 large egg
  • 2 tbsp chopped parsley
  • ½ tsp salt

🍲 For assembly:

  • 12 lasagna noodles
  • ¾ lb (340 g) mozzarella cheese, sliced or shredded
  • ¾ cup Parmesan cheese, grated

🔥 Instructions

1. Make the meat sauce

  1. In a large pot or Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until browned.
  2. Drain excess fat.
  3. Stir in crushed tomatoes, tomato paste, tomato sauce, and water.
  4. Add sugar, basil, fennel seeds, Italian seasoning, 1 tbsp parsley, 1 tsp salt, and pepper.
  5. Simmer at least 30 minutes (or up to 2 hours for deeper flavor), stirring occasionally.

2. Cook the noodles

  • Boil noodles in salted water for about 8 minutes, until al dente.
  • Drain and lay flat on parchment or foil to prevent sticking.

3. Make the ricotta filling

  • In a small bowl, mix ricotta cheese, egg, parsley, and ½ tsp salt until smooth.

4. Assemble the lasagna

In a 9×13-inch baking dish:

  1. Spread 1½ cups of meat sauce on the bottom.
  2. Layer with:
    • 4 noodles
    • ⅓ of ricotta mixture
    • ⅓ of mozzarella
    • ¼ cup Parmesan
    • 1½ cups meat sauce
  3. Repeat layers twice more.
  4. Finish with remaining noodles, sauce, mozzarella, and Parmesan on top.

5. Bake

  1. Preheat oven to 375°F (190°C).
  2. Cover with foil (to prevent sticking, spray foil with cooking spray first).
  3. Bake 25 minutes covered, then remove foil and bake another 25 minutes uncovered, until bubbly and lightly browned.
  4. Let rest 15 minutes before slicing — this sets the layers.
