  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (400 g / 14 oz) diced tomatoes
  • 6 cups vegetable broth (or water + bouillon)
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and black pepper to taste
  • 1 cup chopped spinach or kale (optional, for extra greens)
  • Fresh parsley for garnish (optional)

Instructions

  1. SautΓ© aromatics:
    In a large pot, heat the olive oil over medium heat. Add onion and garlic, and cook until soft and fragrant (about 3–4 minutes).
  2. Add the base vegetables:
    Stir in carrots, celery, and potato. Cook for about 5 minutes, stirring occasionally.
  3. Add remaining ingredients:
    Add zucchini, green beans, diced tomatoes (with their juice), broth, thyme, and basil. Bring to a boil.
  4. Simmer:
    Reduce heat to low and simmer for 25–30 minutes, or until all vegetables are tender.
  5. Add greens (optional):
    Stir in spinach or kale during the last 5 minutes of cooking.
  6. Season and serve:
    Taste and adjust seasoning with salt and pepper. Garnish with parsley if desired.
