Oh, yum! Vegan salted caramel almond balls are a delicious, plant-based treat that are usually raw, naturally sweetened, and super easy to make. Here’s a simple recipe you can follow:


Ingredients

For the balls:

  • 1 cup raw almonds (or any nuts you like)
  • 1 cup pitted medjool dates
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt

For the salted caramel coating:

  • 1/4 cup almond butter (or cashew butter)
  • 2–3 tbsp maple syrup (adjust sweetness)
  • 1/4 tsp sea salt
  • 1 tsp coconut oil (optional, for smoother texture)

Optional:

  • Extra chopped almonds or shredded coconut for rolling

Instructions

  1. Process the base:
    • In a food processor, blend the almonds until they are finely chopped.
    • Add the dates, vanilla, and salt. Blend until the mixture sticks together when pressed.
  2. Form balls:
    • Scoop out small portions of the mixture and roll them into bite-sized balls. Place them on a tray.
  3. Make the salted caramel:
    • In a small bowl, mix almond butter, maple syrup, sea salt, and coconut oil until smooth.
    • Adjust consistency: if too thick, add a tiny bit of water; if too thin, add a bit more almond butter.
  4. Coat the balls:
    • Either dip each ball into the caramel or drizzle the caramel over the balls.
    • Optional: Roll the caramel-coated balls in extra chopped almonds or coconut.
  5. Chill:
    • Place the balls in the fridge for 30–60 minutes to firm up.
  6. Enjoy:
    • Store leftovers in an airtight container in the fridge for up to a week.
