Vanilla scones

Here’s a classic Vanilla Scone recipe — soft, buttery, and infused with warm vanilla flavor, just like the bakery-style ones you find at coffee shops (think Starbucks copycat). ☕🍪


🍯 Ingredients (makes about 8–10 scones)

For the scones:

  • 2 cups (250 g) all-purpose flour
  • ⅓ cup (65 g) granulated sugar
  • 1 Tbsp baking powder
  • ½ tsp salt
  • ½ cup (1 stick / 113 g) cold unsalted butter, cubed
  • ½ cup (120 ml) heavy cream or whole milk (plus a little for brushing)
  • 1 large egg
  • 1 Tbsp vanilla extract (or 1 tsp vanilla bean paste for richer flavor)

For the vanilla glaze:

  • 1 cup (120 g) powdered sugar
  • 2 Tbsp heavy cream or milk
  • ½ tsp vanilla extract or vanilla bean paste

👩‍🍳 Instructions

  1. Preheat oven:
    400 °F (200 °C). Line a baking sheet with parchment paper.
  2. Mix dry ingredients:
    In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in the butter:
    Add the cold, cubed butter. Use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs. (Cold butter = flaky scones!)
  4. Combine wet ingredients:
    In a small bowl, whisk together cream, egg, and vanilla extract.
  5. Form the dough:
    Pour wet mixture into dry ingredients and stir until just combined. (It should look slightly shaggy, not overmixed.)
    If the dough is too sticky, sprinkle with 1–2 Tbsp flour.
  6. Shape & cut:
    • Turn dough onto a lightly floured surface.
    • Pat into a 1-inch-thick circle (about 8 inches across).
    • Cut into 8 wedges or use a biscuit cutter for rounds.
  7. Bake:
    • Place on prepared baking sheet, brush tops lightly with cream.
    • Bake for 14–16 minutes, or until lightly golden around the edges.
    • Cool on a wire rack.
  8. Make the glaze:
    Whisk together powdered sugar, milk/cream, and vanilla until smooth. Drizzle or spread over cooled scones.

💡 Tips

  • For extra tender scones, don’t overwork the dough.
  • Use vanilla bean paste for bakery-level flavor and those pretty black specks.
  • To make ahead: Freeze unbaked scones; bake straight from frozen, adding 2–3 minutes to the baking time.
  • Optional mix-ins: White chocolate chips or a pinch of cinnamon.
