Here’s a comforting, hearty, and cheesy Ultimate Chicken Casserole — loaded with tender chicken, creamy sauce, vegetables, and a golden topping. Perfect for weeknight dinners or potlucks.


🍗🧀 Ultimate Chicken Casserole

Ingredients (Serves 6–8)

Chicken & Veggies

  • 3 cups cooked chicken, shredded or diced
  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 small onion, diced
  • 2 cloves garlic, minced

Creamy Sauce

  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise (optional, for extra creaminess)
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 tsp Dijon mustard (optional)
  • Salt & black pepper to taste
  • 1 tsp paprika

Topping

  • 1 cup crushed buttery crackers, breadcrumbs, or cornflakes
  • 2 tbsp melted butter
  • 1/2 cup shredded cheddar cheese

🔪 Instructions

1. Preheat & Prepare

  • Preheat oven to 350°F (175°C).
  • Lightly grease a 9×13-inch baking dish.

2. Make the Sauce

  1. In a large bowl, mix:
    • cream of chicken soup
    • sour cream
    • mayonnaise (if using)
    • 1 cup cheddar
    • milk
    • Dijon mustard
    • garlic, salt, pepper, paprika
  2. Stir in chicken and vegetables until coated.

3. Assemble Casserole

  • Pour the mixture into the prepared baking dish.
  • Spread evenly.

4. Add Topping

  1. Mix crushed crackers or breadcrumbs with melted butter.
  2. Sprinkle topping evenly over casserole.
  3. Sprinkle 1/2 cup cheddar on top.

5. Bake

  • Bake 30–35 minutes until bubbly and golden on top.
  • Let cool 5 minutes before serving.

Extra Cheesy

  • Mix ½ cup mozzarella with cheddar in the sauce.

Low-Carb Version

  • Use cauliflower or broccoli instead of mixed vegetables.
  • Skip crackers for topping or use almond flour crumbs.

  • Assemble the casserole in advance and refrigerate up to 24 hours; bake when ready.

Add Crunch

  • Sprinkle fried onions on top instead of crackers for a classic touch.
