  • 2 lbs (900 g) beef chuck, cut into 1–2 inch cubes

Instructions

  1. Brown the Beef
    • Heat oil in a large pot or Dutch oven over medium-high heat.
    • Season beef cubes with salt and pepper.
    • Brown the beef on all sides in batches (don’t overcrowd the pan), then set aside.
  2. Cook the Aromatics
    • In the same pot, sauté onions and garlic until soft and fragrant.
    • Stir in tomato paste and cook for 1–2 minutes to deepen flavor.
  3. Deglaze & Add Liquids
    • Pour in Guinness beer (if using) and scrape up browned bits from the bottom of the pot.
    • Add beef stock, Worcestershire sauce, thyme, and bay leaves.
  4. Simmer the Stew
    • Return the browned beef to the pot.
    • Bring to a gentle boil, then reduce heat to low, cover, and simmer for 1.5–2 hours, or until beef is tender.
  5. Add Vegetables
    • Add carrots, parsnips, and potatoes.
    • Simmer for another 30–45 minutes, until vegetables are soft but not falling apart.
  6. Finish & Serve
    • Taste and adjust seasoning with salt and pepper.
    • Remove bay leaves.
    • Garnish with fresh parsley before serving.

Tips for a Truly Irish Flavor

  • Use stew beef with some marbling for a tender, flavorful result.
  • Low and slow cooking is key—don’t rush it.
  • Guinness beer adds a slightly bitter, malty depth that complements the beef.
  • Serve with crusty bread or soda bread to soak up the rich gravy.
