Tender Garlic Butter Steak Bites in Parmesan Cream Sauce

Ingredients

For the Steak Bites

  • 1 ½ lb sirloin, ribeye, or New York strip, cut into 1-inch cubes
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tbsp Worcestershire sauce (optional but delicious)

For the Parmesan Cream Sauce

  • 2 tbsp butter
  • 1 tbsp flour
  • 1 cup heavy cream
  • ½ cup beef broth
  • ¾ cup freshly grated Parmesan cheese
  • ½ tsp Italian seasoning
  • ¼ tsp crushed red pepper flakes (optional)
  • Salt & pepper, to taste
  • Fresh parsley, for garnish

Instructions

1. Season the steak

Pat steak bites dry. Season evenly with:

  • Salt
  • Pepper
  • Garlic powder

Let sit 5 minutes.


2. Sear the steak bites

Heat a large skillet over high heat.

Add olive oil, then add steak bites in a single layer (cook in batches).

Sear 1–2 minutes per side until browned.
Remove to a plate.


3. Make the garlic butter

Lower heat to medium.
Add 3 tbsp butter and allow to melt.

Stir in garlic and cook 30 seconds until fragrant.

Add steak back in along with Worcestershire. Toss to coat.
Transfer steak to a plate again (you’ll add it back later).


4. Make the Parmesan cream sauce

In the same pan:

  1. Add 2 tbsp butter and melt.
  2. Sprinkle in 1 tbsp flour and whisk 30 seconds.
  3. Slowly add heavy cream and beef broth, whisking until smooth.
  4. Add:
    • Parmesan
    • Italian seasoning
    • Red pepper flakes (optional)

Simmer 3–5 minutes until thick and creamy.
Season with salt and pepper.


5. Combine

Return steak bites (and all juices) to the pan.

Toss in the creamy Parmesan sauce and warm through for 1–2 minutes.


6. Serve

Garnish with parsley and extra Parmesan.

Serve over:

  • Mashed potatoes
  • Pasta
  • Rice
  • Cauliflower mash
  • Sautéed spinach
  • Or with crusty bread to soak up the sauce

Tips

✨ Dry the steak well—this is the key to browning.
