Here’s a delicious and easy way to make Taco Stuffed Peppers — all the flavors of tacos in a healthy, colorful package 🌮🫑:

🛒 Ingredients

  • 4 large bell peppers (any color)
  • 1 lb (450 g) ground beef or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1/2 cup cooked rice or quinoa (optional)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 can (15 oz) diced tomatoes, drained
  • Optional toppings: sour cream, salsa, avocado, cilantro

👩‍🍳 Instructions

1️⃣ Prep the Peppers

  1. Preheat oven to 375°F (190°C).
  2. Cut tops off bell peppers and remove seeds.
  3. Blanch peppers in boiling water 3–5 minutes to soften slightly (optional).

2️⃣ Cook the Filling

  1. In a skillet, brown ground beef with onion and garlic.
  2. Drain excess fat.
  3. Stir in taco seasoning, tomatoes, and cooked rice/quinoa if using.

3️⃣ Stuff the Peppers

  1. Spoon taco filling into each bell pepper.
  2. Place in a baking dish and cover with foil.

4️⃣ Bake

  • Bake 25–30 minutes, until peppers are tender.
  • Remove foil, sprinkle cheese on top, and bake another 5–10 minutes until melted.

5️⃣ Serve

  • Top with sour cream, salsa, avocado, or fresh cilantro.
  • Serve as a main dish with a side salad or tortilla chips.

  • Add beans for extra protein and fiber.
  • Spice it up with jalapeños or hot sauce in the filling.
  • Make ahead: Prepare filling the day before, stuff peppers, and bake when ready.
