Sweet Potato Butter Cake Recipe

  • ½ cup milk

Instructions:

  1. Preheat Oven & Prepare Pan:
    Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. Mash Sweet Potato:
    Peel, boil or bake a sweet potato until soft, then mash it until smooth. Let it cool slightly.
  3. Cream Butter & Sugar:
    In a large bowl, beat the softened butter and sugar until light and fluffy.
  4. Add Eggs & Vanilla:
    Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Combine Dry Ingredients:
    In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  6. Mix Sweet Potato & Milk:
    Blend mashed sweet potato with milk.
  7. Combine Everything:
    Gradually add the dry ingredients to the butter mixture, alternating with the sweet potato mixture. Mix until just combined — don’t overmix.
  8. Bake:
    Pour batter into the prepared pan. Bake for 45–55 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool & Serve:
    Let the cake cool in the pan for 10–15 minutes, then transfer to a wire rack. Optionally, dust with powdered sugar or frost with cream cheese frosting.

This cake is naturally moist thanks to the sweet potato and has a rich buttery flavor that pairs perfectly with a cup of tea or coffee.
