Here’s a Sweet Blueberry Biscuit recipe — soft, buttery, and bursting with juicy blueberries. Perfect for breakfast or dessert! 🫐✨

🧁 Ingredients (Makes about 8 biscuits)

For the biscuits:

  • 2 cups (250 g) all-purpose flour
  • 1 tablespoon baking powder
  • 3 tablespoons granulated sugar
  • ½ teaspoon salt
  • ½ cup (1 stick / 115 g) cold unsalted butter, cubed
  • ¾ cup (180 ml) cold milk or heavy cream
  • 1 cup fresh or frozen blueberries (don’t thaw if frozen)

Optional glaze:

  • ½ cup powdered sugar
  • 1–2 tablespoons milk or lemon juice
  • ¼ teaspoon vanilla extract (optional)

👩‍🍳 Instructions

  1. Preheat oven:
    • Preheat to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Mix dry ingredients:
    • In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. Cut in butter:
    • Add cold butter cubes.
    • Use a pastry cutter or your fingers to mix until the texture looks like coarse crumbs (small pea-sized bits of butter).
  4. Add milk:
    • Pour in milk and gently stir just until dough starts to come together (don’t overmix).
  5. Add blueberries:
    • Gently fold in blueberries — try not to crush them too much.
  6. Shape biscuits:
    • Turn dough out onto a floured surface.
    • Pat into a 1-inch thick rectangle and cut into rounds or squares.
    • Place on the prepared baking sheet.
  7. Bake:
    • Bake for 14–16 minutes, or until golden brown on top.
  8. Make glaze (optional):
    • In a small bowl, mix powdered sugar, milk (or lemon juice), and vanilla until smooth.
    • Drizzle over warm biscuits.

💡 Tips

  • Handle the dough gently — overworking makes biscuits tough.
  • For extra flavor, brush the tops with melted butter before baking.
  • Lemon zest in the dough adds a lovely citrusy brightness.
