Here’s a one-pan Stuffed Pepper Skillet recipe — all the flavors of classic stuffed peppers without baking individual peppers. Quick, cheesy, and full of savory goodness! 🌶️🧀🍚


🌶️ Stuffed Pepper Skillet

Serves: 4–6
Prep & Cook Time: ~35–40 minutes


Ingredients

  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 1 bell pepper, diced (optional: use multiple colors)
  • 2–3 cloves garlic, minced
  • 1 cup uncooked white or brown rice
  • 1 3/4 cups beef or chicken broth
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika (optional)
  • Salt & pepper to taste
  • 1 cup shredded cheddar or mozzarella cheese
  • Fresh parsley or green onions for garnish

Instructions

1. Cook the meat

  1. Heat a large skillet over medium heat.
  2. Add ground beef, onion, and bell pepper. Cook until meat is browned and veggies are soft.
  3. Drain excess fat.
  4. Stir in garlic and cook 30 seconds until fragrant.

2. Add rice and liquids

  1. Stir in uncooked rice, diced tomatoes, broth, and seasonings.
  2. Bring to a boil, then reduce heat to low.
  3. Cover and simmer 18–20 minutes (white rice) or 30–35 minutes (brown rice), until rice is tender and liquid is mostly absorbed.

3. Add cheese

  1. Sprinkle shredded cheese over the skillet.
  2. Cover for 2–3 minutes to melt.

4. Serve

  • Garnish with fresh parsley or green onions.
  • Serve hot — it’s a complete meal in one skillet!

Variations & Tips

  • Low-carb version: Use cauliflower rice instead of rice.
  • Spicy version: Add diced jalapeños or a dash of hot sauce.
  • Vegetarian: Replace meat with black beans or lentils.
  • Extra flavor: Top with avocado slices or a dollop of sour cream.
