Ingredients (6–8 servings)

For the cream layer

  • 2 cups milk

  • 12–15 digestive biscuits or Marie biscuits
  • 1/4 cup milk (for soaking)

Instructions

1. Prepare the strawberries

  1. In a small pan, cook strawberries with sugar (and lemon juice if using) over medium heat for 5–7 minutes until slightly soft and syrupy.
  2. Set aside to cool slightly.

2. Make the cream pudding

  1. In a saucepan, mix sugar and cornstarch.
  2. Gradually add milk while whisking to avoid lumps.
  3. Cook over medium heat, stirring constantly until thickened (about 5–7 minutes).
  4. Remove from heat, stir in vanilla and heavy cream (if using).

3. Prepare the biscuit layer

  1. Quickly dip biscuits into milk (do not soak, just a light dip so they soften slightly).
  2. Arrange a layer of biscuits at the bottom of a serving dish or individual cups.

4. Layer the pudding

  1. Spread a layer of cream pudding over the biscuits.
  2. Add a layer of strawberries.
  3. Repeat layers until the dish is full, finishing with a cream layer on top.

5. Chill

  1. Refrigerate for at least 2–3 hours (or overnight) so the pudding sets and flavors meld.

6. Serve

  • Garnish with whipped cream, fresh strawberries, or crushed biscuits.
  • Serve chilled.
