Yum! 🥬 Spinach puffs are buttery, flaky pastries filled with a creamy, cheesy spinach mixture — perfect as appetizers, snacks, or party bites. They look fancy but are actually super easy to make, especially if you use puff pastry.

Here’s a classic spinach puff recipe you’ll love:


🥐 Cheesy Spinach Puffs

Ingredients

For the filling:

  • 1 tbsp olive oil or butter

  • 2 garlic cloves, minced

  • 5 oz (150 g) fresh spinach (or 1 cup frozen, thawed & well-drained)

  • 3 oz (85 g) cream cheese, softened

  • ¼ cup feta cheese or Parmesan cheese

  • ¼ cup shredded mozzarella (optional, for extra cheesiness)

  • ¼ tsp salt

  • ¼ tsp black pepper

  • 1 egg yolk (for richness, optional)

For the pastry:

  • 1 sheet puff pastry, thawed (store-bought or homemade)

  • 1 egg, beaten (for egg wash)


👩‍🍳 Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Cook the filling:

    • In a skillet, heat olive oil or butter over medium heat.

    • Add garlic and cook 30 seconds until fragrant.

    • Add spinach and sauté until wilted (if using fresh).

    • Remove from heat; let cool slightly.

    • Mix in cream cheese, feta (and mozzarella if using), salt, pepper, and egg yolk until creamy.

  3. Prepare the pastry:

    • Unfold puff pastry on a lightly floured surface.

    • Cut into 9 or 12 squares (about 3×3 inches each).

  4. Fill & fold:

    • Place a spoonful of the spinach mixture in the center of each square.

    • Fold over into a triangle or bring the corners together like a pocket.

    • Press edges with a fork to seal.

  5. Brush with egg wash (the beaten egg) for a golden finish.

  6. Bake for 15–20 minutes, until puffed and golden brown.

  7. Cool slightly before serving — the filling will be hot!


🍽️ Serving Ideas

  • Serve warm as an appetizer or brunch snack.

  • Great with a garlic aioli, ranch dip, or marinara sauce.

  • Can be made ahead and frozen unbaked — bake straight from frozen, adding 3–4 extra minutes.
