Ohhh yes 🔥🍗 spicy Southern fried chicken—crispy, juicy, unapologetic.

Spicy Southern Fried Chicken (Real Deal)

Ingredients

Chicken

  • 2–3 lb chicken (drumsticks, thighs, or cut-up whole chicken)

Buttermilk Marinade

  • 2 cups buttermilk
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp cayenne (adjust heat)
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Optional: hot sauce (2–3 tbsp)

Seasoned Flour

  • 2½ cups all-purpose flour
  • 1 tbsp paprika
  • 2 tsp cayenne (or to taste)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp salt

For Frying

  • Peanut, canola, or vegetable oil

Instructions

  1. Marinate
    Mix marinade ingredients. Submerge chicken. Cover and refrigerate at least 4 hours, overnight is best.
  2. Dredge
    Remove chicken from buttermilk (let excess drip). Coat heavily in seasoned flour.
    👉 Pro move: dip back into buttermilk, then flour again for extra crunch.
  3. Rest
    Let coated chicken sit 10–15 minutes—this helps the crust stick.
  4. Fry
    Heat oil to 325–340°F / 165–170°C.
    Fry in batches 12–15 minutes, turning occasionally, until golden and 165°F internal.
  5. Drain & Season
    Rest on a rack. Sprinkle a little salt while hot.

Make it extra spicy 🔥

  • Add chili powder or ghost pepper powder to flour (carefully)
  • Finish with Nashville-style hot oil (cayenne + paprika + hot oil + brown sugar)
  • Serve with pickles, honey, or hot honey

Don’t skip these

  • Dark meat = juicier
  • Oil temp matters more than time
  • Rack > paper towels for crispiness
