Southern styled lima beans

Here’s a classic Southern-style lima beans recipe—simple, comforting, and full of flavor 🌱

Southern-Style Lima Beans

Ingredients

  • 1 lb dried lima beans (or 4 cups fresh/frozen)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 smoked ham hock or 4–6 slices smoked bacon
  • 6–8 cups water or chicken broth
  • 1 bay leaf (optional)
  • Salt and black pepper, to taste
  • 1 tbsp butter (optional, for richness)

Instructions

  1. Soak (if using dried beans):
    Rinse beans and soak overnight in water. Drain and rinse.
  2. Start the pot:
    In a large pot, add beans, ham hock (or bacon), onion, garlic, bay leaf, and liquid.
  3. Simmer:
    Bring to a gentle boil, then lower heat and simmer uncovered 1½–2 hours, stirring occasionally, until beans are tender and creamy.
  4. Season:
    Remove bay leaf and ham hock (shred meat and return it to the pot). Add salt and pepper to taste. Stir in butter if using.
  5. Serve:
    Great with cornbread, collard greens, or fried chicken.

Tips & Variations

  • Like them creamier? Mash a spoonful of beans against the side of the pot and stir.
  • No meat? Use vegetable broth, add smoked paprika, and a splash of olive oil.
  • Fresh or frozen limas cook faster—usually 30–45 minutes.
