For the Cornbread Poppers

  • 1 cup (125 g) yellow cornmeal
  • ¾ cup (95 g) all-purpose flour
  • 2 tbsp granulated sugar (optional — more if you like sweeter cornbread)
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup (240 ml) buttermilk (or 1 cup milk + 1 tbsp vinegar, rested 5 min)
  • 2 large eggs
  • ¼ cup (60 g) unsalted butter, melted
  • 2 tbsp honey
  • Optional: 1 cup shredded sharp cheddar or ½ cup chopped jalapeños (for a savory kick)

For the Honey Butter Glaze

  • ¼ cup (60 g) unsalted butter
  • 2 tbsp honey
  • Pinch of salt

👩‍🍳 Directions

1. Preheat & Prep

  • Preheat oven to 400°F (200°C).
  • Lightly grease a mini muffin pan or popper pan (24-count works great).

2. Mix the Batter

  1. In a medium bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk buttermilk, eggs, melted butter, and honey.
  3. Pour the wet into the dry ingredients and stir just until combined — don’t overmix!
  4. (Optional) Fold in cheddar or jalapeños.

3. Bake

  • Spoon batter into the mini muffin cups, filling about ¾ full.
  • Bake 10–12 minutes, until golden and a toothpick comes out clean.

4. Make the Honey Butter Glaze

  • Melt butter and honey together in a small saucepan (or microwave 20–30 seconds).
  • Stir in a pinch of salt until smooth and silky.

5. Finish

  • Brush the warm poppers generously with the honey butter glaze right after baking.
  • Let sit 5 minutes to soak in — then serve warm!
