Sour Cream Noodle Bake

Ingredients (serves 4–6)

  • 12 oz egg noodles
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 1 teaspoon sugar (optional, balances acidity)
  • 1 teaspoon paprika
  • Salt & black pepper to taste

Creamy layer

  • 1 cup sour cream
  • 1 cup cottage cheese (or ricotta)
  • ½ teaspoon salt

Topping

  • 1½–2 cups shredded cheddar or Colby-Jack cheese
  • Fresh parsley (optional)

Instructions

  1. Preheat oven
    • Preheat to 350°F (175°C).
    • Grease a 9×13-inch baking dish.
  2. Cook noodles
    • Boil egg noodles in salted water until just al dente.
    • Drain and set aside.
  3. Make meat sauce
    • In a skillet over medium heat, brown ground beef with onion.
    • Drain excess fat.
    • Add garlic, tomato sauce, sugar, paprika, salt, and pepper.
    • Simmer 5–10 minutes.
  4. Mix creamy layer
    • In a bowl, combine sour cream, cottage cheese, and salt.
  5. Assemble
    • Layer half the noodles in the baking dish.
    • Spread half the sour cream mixture over noodles.
    • Top with half the meat sauce.
    • Repeat layers.
  6. Top & bake
    • Sprinkle shredded cheese evenly on top.
    • Bake uncovered 25–30 minutes, until bubbly and golden.
  7. Serve
    • Let rest 5–10 minutes. Garnish with parsley if desired.

🔥 Tips & Variations

  • Swap beef for ground turkey for a lighter version.
  • Add Italian seasoning or a pinch of red pepper flakes for more flavor.
  • Mix a little mozzarella with the cheddar for extra melt.
  • Tastes even better the next day.
