Slow Cooker Garlic Parmesan Potatoes

Ingredients

  • 2 lbs baby potatoes, halved or quartered if large
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil or melted butter
  • 1 tsp Italian seasoning (or mix of thyme, rosemary, oregano)
  • Salt & pepper, to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Prep potatoes: Wash and halve (or quarter) the potatoes so they cook evenly.
  2. Mix ingredients: In a large bowl, toss potatoes with garlic, Parmesan, olive oil, Italian seasoning, salt, and pepper.
  3. Cook:
    Place potatoes in the slow cooker. Cook on low for 4–5 hours or high for 2–3 hours, until tender.
  4. Serve:
    Sprinkle with extra Parmesan and parsley before serving.

Tips

  • For extra crispiness, transfer cooked potatoes to a baking sheet and broil 3–5 minutes.
  • Add chopped onions or bell peppers for extra flavor.
  • Adjust garlic to taste; roasted garlic cloves can be added for a milder, sweeter flavor.
