Here’s a simple, flavorful slow-cooker chicken with onions and peppers—tender, juicy, and very versatile 🌶️🧅


Slow Cooker Chicken with Onions & Peppers

Ingredients (serves 4–6)

  • 2–2½ lb chicken thighs (boneless or bone-in; breasts work but thighs stay juicier)
  • 2 tbsp olive oil
  • 2 large onions, sliced
  • 3 bell peppers (mix of red, yellow, green), sliced
  • 3 garlic cloves, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika (smoked if possible)
  • 1 tsp Italian seasoning or oregano
  • ½ tsp chili flakes (optional)
  • ½ cup chicken broth
  • 1 tbsp soy sauce or Worcestershire (optional, for depth)

Instructions

  1. Layer
    • Add onions and peppers to the slow cooker
    • Sprinkle with half the salt and seasoning
  2. Season Chicken
    • Rub chicken with remaining salt, pepper, paprika, and herbs
  3. Assemble
    • Place chicken on top of vegetables
    • Add garlic, broth, and soy/Worcestershire
  4. Cook
    • LOW: 6–7 hours
    • HIGH: 3–4 hours
    • Chicken should be very tender
  5. Optional Finish (Recommended)
    • Remove chicken and broil or pan-sear 3–5 minutes for color
    • Stir veggies and juices together before serving

Serving Ideas

  • Over rice, mashed potatoes, or polenta
  • In sandwiches or wraps
  • For fajitas (add cumin + lime at the end)
  • With crusty bread to soak up juices

Variations

  • Mediterranean: add olives, oregano, splash of lemon
  • Mexican-style: cumin, chili powder, finish with cilantro
  • Sweet & savory: add 1 tbsp honey or balsamic glaze
