Slow Cooker Chicken with Onions & Peppers
Ingredients (serves 4–6)
- 2–2½ lb chicken thighs (boneless or bone-in; breasts work but thighs stay juicier)
- 2 tbsp olive oil
- 2 large onions, sliced
- 3 bell peppers (mix of red, yellow, green), sliced
- 3 garlic cloves, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika (smoked if possible)
- 1 tsp Italian seasoning or oregano
- ½ tsp chili flakes (optional)
- ½ cup chicken broth
- 1 tbsp soy sauce or Worcestershire (optional, for depth)
Instructions
- Layer
- Add onions and peppers to the slow cooker
- Sprinkle with half the salt and seasoning
