🛒 Ingredients (Serves 4)

  • 4 bone-in, skin-on chicken thighs or drumsticks
  • 1.5 lbs (680 g) baby potatoes or diced regular potatoes
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried thyme (or rosemary)
  • 1 tsp salt, ½ tsp pepper (adjust to taste)
  • ½ cup chicken broth
  • 2 tbsp olive oil or melted butter
  • Optional: chopped parsley for garnish

  1. Prep the slow cooker: Lightly grease the crockpot with cooking spray or a little oil.
  2. Season chicken: Rub chicken with paprika, thyme, salt, and pepper.
  3. Layer ingredients:
    • Place potatoes and onions at the bottom of the slow cooker.
    • Add garlic.
    • Place chicken on top. Drizzle olive oil over everything.
  4. Add broth: Pour chicken broth around the sides (not over the top to keep skin a bit crispy if using skin-on chicken).
  5. Cook:
    • Low for 6–7 hours, or
    • High for 3–4 hours, until chicken is cooked through and potatoes are tender.
  6. Optional crisping: For crispy skin, broil chicken in the oven 3–5 minutes after cooking.
  7. Serve: Garnish with parsley and enjoy with a side salad or steamed vegetables.

  • Cut potatoes evenly for uniform cooking.
  • You can swap potatoes with sweet potatoes or add carrots for extra flavor.
  • Use boneless chicken breasts for a leaner option, but reduce cooking time to avoid drying out.
