Slow Cooker Chicken

Ingredients (serves 4–6)

  • 4–6 boneless, skinless chicken breasts (or thighs for extra flavor)
  • 1 cup chicken broth
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme (or Italian seasoning)
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • 1 tablespoon olive oil (optional, for extra flavor)
  • Optional: 1/2 cup cream or 1/2 cup diced tomatoes for a richer sauce

Instructions

  1. Prepare the slow cooker:
    • Place sliced onions and garlic at the bottom of the slow cooker.
  2. Season the chicken:
    • Rub chicken with salt, pepper, paprika, and thyme.
  3. Add liquid:
    • Pour chicken broth over the chicken. You can also add cream or diced tomatoes at this stage if desired.
  4. Cook:
    • Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and cooked through (internal temperature 165°F / 74°C).
  5. Optional finishing touch:
    • Remove chicken and thicken the sauce with a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons water. Simmer on high in the slow cooker for 10–15 minutes.
  6. Serve:
    • Serve with rice, mashed potatoes, pasta, or steamed vegetables. Spoon the sauce over the chicken for extra flavor.
