Slow Cooker Beef Tips & Gravy

Ingredients (serves 4–6):

  • 2 lbs (900 g) beef stew meat or sirloin tips
  • Salt and black pepper, to taste
  • 2 tbsp olive oil or vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional)
  • 1 tsp dried thyme or 1 tbsp fresh thyme
  • ½ tsp paprika
  • 2 tbsp cornstarch + 2 tbsp water (for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sear the beef (optional but recommended):
    • Season beef with salt and pepper.
    • Heat oil in a skillet over medium-high heat and brown the beef on all sides (2–3 minutes per side).
    • Transfer to the slow cooker.
  2. Prepare the slow cooker:
    • Add chopped onions, garlic, beef broth, Worcestershire sauce, Dijon mustard, thyme, and paprika.
    • Stir to combine and cover.
  3. Cook:
    • Low: 6–8 hours
    • High: 3–4 hours
    • Beef should be tender and easily shredded with a fork.
  4. Make the gravy:
    • Remove beef and set aside.
    • Mix cornstarch with water to make a slurry.
    • Stir into the liquid in the slow cooker and cook on high for 10–15 minutes until thickened.
  5. Serve:
    • Return beef to the gravy and stir gently.
    • Garnish with parsley and serve over mashed potatoes, rice, or egg noodles.

Tips

  • For richer flavor: Sear beef and onions in the same pan before adding to the slow cooker.
  • Optional add-ins: Mushrooms, bell peppers, or carrots can be added with the onions.
  • Make ahead: This dish tastes even better the next day after flavors meld.

💡 Pro tip: If you want an extra creamy gravy, stir in ½ cup of sour cream just before serving.
