Slow cooker beef stew

Here’s a simple and delicious slow cooker beef stew recipe you can try. It’s hearty, flavorful, and perfect for a cozy meal.


Ingredients (serves 4-6)

  • 2 lbs (900 g) beef chuck, cut into 1-2 inch cubes
  • 3 tablespoons all-purpose flour
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 4 cups beef broth
  • 1 cup red wine (optional, can replace with more beef broth)
  • 3 carrots, peeled and cut into chunks
  • 3 potatoes, peeled and cut into chunks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 celery stalks, sliced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 cup frozen peas (added at the end)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the beef
    • In a bowl, toss beef cubes with flour, salt, and pepper until coated.
  2. Brown the beef (optional but recommended)
    • Heat olive oil in a pan over medium-high heat.
    • Sear beef cubes until browned on all sides (2-3 minutes per side).
    • Transfer to the slow cooker.
  3. Add vegetables and seasonings
    • Place carrots, potatoes, onion, garlic, and celery in the slow cooker.
    • Stir in tomato paste, thyme, rosemary, bay leaves, beef broth, and wine (if using).
  4. Cook
    • Cover and cook on low for 7-8 hours or high for 4-5 hours, until beef is tender and vegetables are cooked.
  5. Finish
    • About 30 minutes before serving, stir in frozen peas.
    • Remove bay leaves before serving.
    • Garnish with chopped parsley.

✅ Tips:

  • For a thicker stew, mix 2 tablespoons of flour or cornstarch with 3 tablespoons of cold water and stir into the stew about 30 minutes before it’s done.
  • If you like a richer flavor, add a splash of Worcestershire sauce or soy sauce.
