Slimming Vegetable Soup

Ingredients (Serves 4)

  • 1 bell pepper, chopped
  • 1 can (400 g) chopped tomatoes

  • Optional: chopped parsley or spinach for garnish

Instructions

  1. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until soft.
  2. Add vegetables: Add carrots, celery, zucchini, and bell pepper. Sauté for 5 minutes.
  3. Add liquids and herbs: Pour in chopped tomatoes and stock. Add thyme, salt, and pepper.
  4. Simmer: Bring to a boil, then reduce heat and simmer for 20–25 minutes until vegetables are tender.
  5. Optional blend: For a smooth texture, use an immersion blender or regular blender to purée half or all of the soup.
  6. Serve: Garnish with fresh parsley or a handful of spinach for extra nutrients.
