Scrambled eggs with sausage and green peppers

Posted on November 8, 2025 by Admin

Here’s a tasty and simple recipe for scrambled eggs with sausage and green peppers β€” perfect for breakfast or a quick meal! 🌱πŸ₯šπŸŒ

πŸ₯˜ Scrambled Eggs with Sausage and Green Peppers

Servings: 2
Prep time: 5 minutes
Cook time: 10 minutes

Ingredients

  • 4 large eggs
  • 2 breakfast sausages (or any sausage you like), sliced or crumbled
  • 1 small green bell pepper, diced
  • 1 small onion, diced (optional)
  • 1–2 tbsp milk or cream (optional, for fluffier eggs)
  • Salt and black pepper, to taste
  • 1 tbsp butter or oil
  • Optional toppings: shredded cheese, hot sauce, fresh herbs

Instructions

  1. Cook the sausage:
Heat a skillet over medium heat. Add the sausage and cook until browned and cooked through, about 5 minutes. Remove and set aside if you want to cook the eggs separately.
  2. Cook the vegetables:
In the same skillet, add butter or oil. SautΓ© the green pepper (and onion, if using) for 3–4 minutes until softened.
  3. Prepare the eggs:
In a bowl, whisk together the eggs, milk (if using), salt, and pepper until combined.
  4. Combine and scramble:
Add the sausage back to the skillet with the vegetables. Pour in the eggs. Let sit for a few seconds, then gently stir with a spatula, pushing the eggs from the edges to the center until just set but still slightly creamy. Remove from heat immediately β€” eggs continue cooking off the heat.
  5. Serve:
Plate the scrambled eggs, optionally top with cheese, herbs, or a dash of hot sauce.

🌟 Tips

  • For extra flavor, use spicy sausage or add paprika or chili flakes.
  • You can also toss in mushrooms, tomatoes, or spinach for a veggie boost.
  • Cooking on medium-low heat helps keep the eggs soft and creamy instead of rubbery.

If you want, I can also give a one-pan version where everything cooks together for even faster prep and cleanup. Do you want me to do that?
