Sausage peppers and potatoes

Here’s a classic, hearty Sausage, Peppers, and Potatoes recipe—simple, comforting, and full of flavor. Works great as a one-pan meal or for feeding a crowd.


Sausage, Peppers & Potatoes

Ingredients (serves 4–6)

  • 1½ lb smoked sausage or Italian sausage (mild or hot), sliced
  • 2 lb potatoes (Yukon gold or red), cut into chunks
  • 2–3 bell peppers (any color), sliced
  • 1 large onion, sliced
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Optional: crushed red pepper flakes, fresh parsley

Oven-Baked Method (Best Flavor)

  1. Preheat oven to 400°F (205°C).
  2. In a large bowl, toss potatoes with 2 tbsp olive oil, salt, pepper, paprika, garlic powder, and Italian seasoning.
  3. Spread potatoes on a large baking sheet. Bake 20 minutes.
  4. Add sausage, peppers, and onions. Drizzle with remaining oil and toss gently.
  5. Return to oven and bake 25–30 minutes, stirring once, until potatoes are tender and sausage is browned.
  6. Garnish with parsley or red pepper flakes if desired.

Skillet Method (Stovetop & Fast)

  1. Heat oil in a large skillet over medium heat.
  2. Add potatoes, cover, and cook 10–12 minutes, stirring occasionally until fork-tender.
  3. Add sausage and cook until browned.
  4. Add peppers and onions; cook 5–7 minutes until soft.
  5. Season and serve hot.

Slow Cooker Option

  • Add everything to the slow cooker with ½ cup broth.
  • Cook LOW 5–6 hours or HIGH 3–4 hours.

Flavor Variations

  • Garlic butter: Finish with a pat of butter + minced garlic
  • Cheesy: Sprinkle mozzarella or provolone during last 5 minutes
  • Spicy: Use hot sausage + chili flakes
  • Soul food style: Add smoked paprika + a splash of Worcestershire
