Salmon Loaf (serves 4–6)
Ingredients
- 2 cans (14–15 oz each) salmon, drained (remove skin/bones if you want)
- 2 eggs, beaten
- 1 cup soft breadcrumbs or crushed crackers
- ½ cup milk
- ¼ cup finely chopped onion (optional)
- 1–2 tbsp lemon juice
- 1 tbsp melted butter or oil
- ½–1 tsp salt
- ¼ tsp pepper
- Optional: parsley, dill, or garlic powder
Instructions
- Heat oven to 350°F (175°C).
- Flake the salmon in a bowl.
- Add eggs, breadcrumbs, milk, onion, lemon juice, butter, salt, pepper, and any herbs.
- Mix gently until combined.
- Press into a greased loaf pan.
- Bake 45–55 minutes, until firm and lightly golden.
- Let rest 5–10 minutes, then slice.
