Here’s an easy and tasty red onion recipe that works great on tacos, burgers, salads, or sandwiches:

Quick Pickled Red Onions 🧅

Ingredients

  • 1 red onion
  • ½ cup vinegar (white or apple cider)
  • ½ cup water
  • 1 tablespoon sugar
  • 1½ teaspoons salt

Optional add-ins (for flavor)

  • A few peppercorns
  • A clove of garlic
  • A pinch of chili flakes

Instructions

  1. Slice the red onion thinly.
  2. In a small pot (or microwave-safe bowl), heat the vinegar, water, sugar, and salt until the sugar and salt dissolve.
  3. Put the sliced onions in a jar or bowl.
  4. Pour the hot liquid over the onions until they’re covered.
  5. Let cool for about 20–30 minutes.

How to use

  • On tacos or wraps
  • In salads or grain bowls
  • On burgers or sandwiches

They keep in the fridge for up to 2 weeks.
