Here’s a hearty and comforting recipe for a Potato Meatball Bake — layers of tender meatballs, creamy potatoes, and cheese, perfect for a family dinner.

Cook Time: 35–40 minutes

Ingredients

For the Meatballs:

  • 1 lb (450 g) ground beef, chicken, or turkey
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • ½ cup breadcrumbs
  • 1 egg
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: 1 tsp dried herbs (oregano, parsley, or thyme)

For the Potato Layer:

  • 3–4 medium potatoes, thinly sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Other Ingredients:

  • 1 cup shredded cheese (cheddar, mozzarella, or mix)
  • 1 cup tomato sauce or pasta sauce
  • ½ cup milk or cream (optional, for creamier texture)

Instructions

  1. Preheat oven
    • 375°F (190°C).
  2. Prepare the meatballs
    • In a bowl, combine ground meat, onion, garlic, breadcrumbs, egg, salt, pepper, and herbs.
    • Shape into small meatballs (about 1–1.5 inches).
    • Optional: Lightly brown meatballs in a skillet for 3–4 minutes (not fully cooked).
  3. Prepare the potatoes
    • Slice potatoes thinly and toss with olive oil, salt, and pepper.
  4. Assemble the bake
    • In a greased baking dish, layer half the potatoes on the bottom.
    • Spread half the tomato sauce over potatoes.
    • Place meatballs evenly on top.
    • Cover with the remaining potatoes and sauce.
    • Pour milk or cream over for extra creaminess, if desired.
    • Top with shredded cheese.
  5. Bake
    • Cover with foil and bake 25–30 minutes.
    • Remove foil and bake an additional 10 minutes until cheese is golden and bubbly.
  6. Serve
    • Let cool slightly, then slice and serve with a side salad or steamed vegetables.

Tips

  • Add vegetables like bell peppers or zucchini for extra nutrition.
  • Use leftover mashed potatoes for a different twist.
  • Can be made ahead and baked later — just extend baking time slightly if starting from cold.
