Ingredients (serves 4)

For the Pork Chops

For the Scalloped Potatoes

  • 4–5 medium russet potatoes, peeled and thinly sliced

  • 3 tbsp butter
  • 3 tbsp all-purpose flour

Instructions

1. Preheat Oven

  • Preheat oven to 375°F (190°C).
  • Grease a 9×13-inch baking dish.

2. Prepare the Creamy Sauce for Potatoes

  1. In a medium saucepan, melt butter over medium heat.
  2. Whisk in flour to make a roux; cook 1–2 minutes until slightly golden.
  3. Gradually whisk in milk until smooth.
  4. Stir in garlic powder, salt, and pepper.
  5. Cook 3–4 minutes until slightly thickened. Remove from heat.

3. Assemble the Scalloped Potatoes

  • Layer half of the sliced potatoes and onions in the baking dish.
  • Pour half of the cream sauce over the top.
  • Sprinkle with half the cheese.
  • Repeat with remaining potatoes, sauce, and cheese.

4. Prepare Pork Chops

  1. Season pork chops with salt, pepper, and paprika.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear pork chops 2–3 minutes per side until golden (they’ll finish cooking in the oven).

5. Combine and Bake

  • Nestle pork chops on top of the scalloped potatoes.
  • Cover dish with foil.
  • Bake 35–45 minutes, until potatoes are tender and pork reaches 145°F (63°C) internal temperature.
  • Optional: Remove foil for last 10 minutes to brown the top.

6. Serve

  • Garnish with fresh parsley or thyme.
  • Serve hot with a simple side salad or steamed veggies.
