Pork belly burnt ends

Posted on December 18, 2025 by Admin

Here’s a detailed recipe for Pork Belly Burnt Ends—crispy, caramelized, and full of rich, smoky flavor.

Pork Belly Burnt Ends

Servings: 4–6

Ingredients

  • 2 lbs pork belly, skin removed, cut into 1-inch cubes
  • 2–3 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ cup barbecue sauce (your favorite brand)
  • 2–3 tbsp brown sugar
  • Optional: honey or maple syrup for extra glaze

Instructions

  1. Preheat cooking method
    • Smoker: 250°F (120°C)
    • Oven: 275°F (135°C) with a wire rack over a baking sheet
  2. Season pork belly
    • Toss cubes with olive oil, salt, pepper, smoked paprika, garlic powder, and onion powder.
  3. Initial cooking stage
    • Place cubes on smoker grate or wire rack.
    • Cook 1.5–2 hours until tender but not falling apart.
  4. Add sauce and sugar
    • Mix barbecue sauce with brown sugar (and honey/maple if desired).
    • Toss pork belly cubes in the sauce mixture until well coated.
  5. Caramelize
    • Return to smoker or oven and cook 45–60 minutes more, stirring occasionally.
    • Burnt ends should be dark, sticky, and tender.
  6. Serve
    • Let rest 5 minutes, then serve as an appetizer, snack, or main dish.

Pro Tips

  • Crispier edges: Spread cubes in a single layer; don’t overcrowd.
  • Extra smoky flavor: Use hickory, apple, or cherry wood chips if smoking.
  • Sweet & spicy: Add a pinch of cayenne or chili powder to the sauce.
  • Make ahead: Reheat gently in a low oven or air fryer.

For a faster alternative, I can provide a quick oven-only method that skips the smoker but still yields sticky, caramelized burnt ends.

Do you want me to provide that version?
