🧂 Ingredients

Chicken & Marinade

  • 3–4 lbs chicken pieces (legs, thighs, breasts, wings — bone-in preferred)

  • 2 cups buttermilk

  • 2 large eggs

  • 1 tbsp hot sauce (like Louisiana or Tabasco)

  • 2 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp cayenne pepper (optional for more heat)

Flour Dredge

  • 2 cups all-purpose flour

  • ½ cup cornstarch (for that extra-crispy texture)

  • 2 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp cayenne pepper

  • 1 tsp salt

  • 1 tsp black pepper

For Frying

  • Neutral oil (like peanut or canola) for deep frying

  • Heavy pot or deep fryer

  • Thermometer (for best results)

1. Marinate the Chicken (Key Step!)

  • In a large bowl, whisk together buttermilk, eggs, hot sauce, and all marinade spices.

  • Add chicken pieces and coat well.

  • Cover and refrigerate for at least 4 hours, ideally overnight for maximum flavor and tenderness.


2. Prepare the Coating

  • In a separate bowl, whisk together flour, cornstarch, and dredge spices.

  • Remove chicken from marinade, letting excess drip off.

  • Dredge each piece in the flour mix — press firmly so it sticks.

  • For an extra crispy crust:

    • Dip chicken back into the buttermilk, then dredge again in flour (double coating).


3. Fry the Chicken

  • Heat oil in a deep pot to 325°F (163°C).

  • Fry chicken in batches (don’t crowd the pot) for:

    • Dark meat: 13–16 minutes

    • White meat: 10–12 minutes

  • Turn halfway through for even color.

  • Chicken is done when golden brown and internal temp hits 165°F (74°C).


4. Drain & Rest

  • Remove and place on a wire rack (not paper towels — keeps it crispy).

  • Let rest 10 minutes before serving to keep the crust intact.

  • For extra flavor, sprinkle finished chicken with a little Cajun seasoning while hot.
