🛒 Ingredients

  • 4 large potatoes, peeled
  • 1 small onion
  • 2 large eggs
  • 3–4 tbsp all-purpose flour
  • Salt & pepper to taste
  • Oil for frying (vegetable or canola)
  • Optional toppings: sour cream, applesauce, or smoked salmon

👩‍🍳 Instructions

1️⃣ Grate Potatoes and Onion

  1. Grate potatoes and onion finely (use a box grater or food processor).
  2. Place grated potatoes in a clean kitchen towel and squeeze out excess liquid — this prevents soggy pancakes.

2️⃣ Mix the Batter

  1. In a bowl, combine grated potatoes and onion.
  2. Add eggs, flour, salt, and pepper. Mix until it forms a thick, sticky batter.

3️⃣ Fry the Pancakes

  1. Heat a few tablespoons of oil in a large skillet over medium heat.
  2. Spoon 2–3 tablespoons of batter per pancake into the skillet, flattening gently.
  3. Fry 3–4 minutes per side, until golden brown and crispy.
  4. Transfer to paper towels to drain excess oil.

  • Serve hot with sour cream for savory, or applesauce for a sweet-savory twist.

  • Crispier pancakes: Fry in batches without overcrowding the skillet.
