🧾 Ingredients (makes 2–3 calzones)

For the dough:

  • 2 cups all-purpose flour
  • 1 tsp sugar
  • 1 tsp salt

  • ¾ cup warm water

For the filling:

  • 1 cup shredded mozzarella cheese
  • ½ cup ricotta cheese (optional for creaminess)
  • ½ cup sliced pepperoni

  • ½ tsp garlic powder
  • 2–3 tbsp pizza sauce (plus extra for dipping)

For brushing:

  • 1 egg, beaten or olive oil

1. Make the dough

  1. Mix warm water and yeast, let sit 5 minutes.
  2. Combine flour, sugar, and salt in a bowl.
  3. Add yeast mixture and olive oil. Knead 5–7 minutes until smooth.
  4. Cover and let rise 1–1.5 hours until doubled.

2. Prepare the filling

  • In a bowl, combine mozzarella, ricotta, pepperoni, oregano, and garlic powder.
  • Set aside.

3. Assemble the calzones

  1. Preheat oven to 425°F (220°C).
  2. Divide dough into portions and roll each into a 6–8 inch circle.
  3. Spoon filling onto one half, leaving edges free.
  4. Fold dough over and crimp edges to seal.

4. Bake

  • Place on a parchment-lined baking sheet.
  • Brush with egg or olive oil for golden crust.
  • Bake 15–20 minutes until golden brown.

5. Serve

  • Let cool 5 minutes, slice, and serve with pizza sauce for dipping.
