Pecan Pie Balls

Ingredients:

  • 1 cup finely chopped pecans
  • 1 cup brown sugar, packed

  • 2 tablespoons corn syrup or maple syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups crushed graham crackers or shortbread cookies (for coating)
  • Optional: 1/2 cup chocolate chips (for dipping)

Instructions:

  1. Make the pecan filling:
    • In a bowl, combine chopped pecans, brown sugar, melted butter, corn syrup, salt, and vanilla. Mix well until it’s sticky and holds together.
  2. Form balls:
    • Using your hands or a small cookie scoop, roll the mixture into 1-inch balls.
  3. Coat the balls:
    • Roll each ball in crushed graham crackers or cookies until fully coated. This keeps them from being too sticky and adds a nice crunch.
  4. Optional chocolate dip:
    • Melt chocolate chips in a microwave or double boiler. Dip each pecan ball halfway or fully into chocolate, then place on wax paper to set.
  5. Chill:
    • Refrigerate for at least 1 hour to firm up before serving.
