Pecan Dandy Do’s

Here’s a classic, well-known version of Pecan Dandy-Do’s — a vintage-style bar cookie that tastes like a cross between pecan pie and blondies.

Pecan Dandy-Do’s Recipe

Ingredients

Crust:

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup (1 stick) unsalted butter, softened

Filling:

  • 2 large eggs
  • 1 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped pecans
  • (Optional) 1/2 cup shredded coconut or chocolate chips

Instructions

1. Prepare the crust

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour and powdered sugar.
  3. Cut in butter (or mix) until the dough resembles coarse crumbs.
  4. Press mixture evenly into an ungreased 8×8-inch baking pan.
  5. Bake 12–15 minutes, until lightly golden.

2. Make the filling

  1. In a medium bowl, beat the eggs.
  2. Add brown sugar and vanilla; mix until smooth.
  3. Stir in flour, baking powder, and salt.
  4. Fold in pecans (and optional coconut or chocolate chips).

3. Bake

  1. Spread filling evenly over the hot crust.
  2. Return to oven and bake 20–25 minutes, until set and lightly browned.
  3. Cool completely before cutting into bars.

Tips

  • For a gooier bar, reduce baking time by a few minutes.
  • For a deeper pecan flavor, lightly toast the pecans before adding.
