🍫 Peanut Butter Blondies Recipe

Ingredients (for 9–12 squares):

  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup creamy peanut butter (plus extra for swirls)
  • Optional: 1/2 cup chocolate chips or chopped peanuts

Instructions:

  1. Preheat oven & prep pan
    • Preheat oven to 350°F (175°C).
    • Line an 8×8-inch baking pan with parchment paper and lightly grease it.
  2. Mix wet ingredients
    • In a large bowl, combine melted butter, brown sugar, and granulated sugar.
    • Stir in eggs and vanilla extract until smooth.
  3. Combine dry ingredients
    • In a separate bowl, whisk together flour, baking powder, and salt.
  4. Mix batter
    • Gradually fold dry ingredients into wet ingredients.
    • Add peanut butter and optional chocolate chips. Stir gently until just combined.
  5. Create peanut butter swirl (optional)
    • Drop small spoonfuls of extra peanut butter on top and swirl with a knife for a marbled effect.
  6. Bake
    • Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out mostly clean (a few moist crumbs are okay).
  7. Cool & slice
    • Let blondies cool in the pan for 10–15 minutes, then lift out using parchment paper.
    • Slice into squares and enjoy!

Tips for Chewy Blondies

  • Don’t overbake—blondies continue to firm up as they cool.
  • Use lightly packed brown sugar for extra chewiness.
  • For extra richness, drizzle melted chocolate on top after cooling.
