Peach Cobbler Egg Rolls
Ingredients
- 2 cups peaches (fresh or canned, diced & well-drained)
- ¼ cup brown sugar
- 2 tbsp granulated sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg (optional but nice)
- 1 tsp lemon juice
- 1 tsp vanilla
- 1 tbsp cornstarch + 2 tbsp water (slurry)
- Egg roll wrappers
- Oil for frying
- Powdered sugar (for dusting)
Optional extras
- 2 tbsp butter
- A splash of bourbon or rum (grown-up energy 😏)
Instructions
- Make the filling:
In a saucepan, combine peaches, sugars, cinnamon, nutmeg, lemon juice, vanilla, and butter. Cook over medium heat until bubbly. - Stir in the cornstarch slurry and cook 1–2 minutes until thick and glossy. Let it cool (important so the wrappers don’t blow out).
- Assemble:
Lay out an egg roll wrapper like a diamond. Add 2–3 tablespoons of filling near the bottom.
Fold bottom over filling, fold in sides, roll tightly, and seal edge with water. - Fry:
Heat oil to ~350°F (175°C). Fry egg rolls 2–3 minutes per side until golden brown. - Drain on paper towels and dust with powdered sugar.

- Cinnamon sugar toss while warm
- Vanilla glaze drizzle

Air Fryer Option
- Brush egg rolls with melted butter
- Air fry at 375°F for 7–9 minutes, flipping halfway
