Here’s a Peach Cobbler Cheesecake that’s rich, creamy, and loaded with warm cinnamon-peach flavor 🍑🍰
It tastes like classic Southern peach cobbler met New York–style cheesecake.


Peach Cobbler Cheesecake

Ingredients

Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon

Peach Filling

  • 3 cups peaches (fresh or canned, drained & sliced)
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tsp vanilla

Cheesecake Filling

  • 3 (8 oz) blocks cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 tsp vanilla

Cobbler Topping

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup cold butter, cubed

Instructions

  1. Prep the pan
    • Preheat oven to 325°F (165°C).
    • Line a 9-inch springform pan with parchment and grease sides.
  2. Make the crust
    • Mix graham crumbs, butter, brown sugar, and cinnamon.
    • Press firmly into pan.
    • Bake 10 minutes, then cool.
  3. Cook the peaches
    • In a saucepan, combine peaches, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and vanilla.
    • Cook over medium heat until thickened (5–7 minutes).
    • Let cool slightly.
  4. Make cheesecake filling
    • Beat cream cheese until smooth.
    • Add sugar, then eggs one at a time.
    • Mix in sour cream and vanilla (don’t overmix).
  5. Assemble
    • Pour cheesecake filling over crust.
    • Spoon peach mixture evenly on top.
  6. Make cobbler topping
    • Mix flour, brown sugar, cinnamon, and salt.
    • Cut in cold butter until crumbly.
    • Sprinkle evenly over peaches.
  7. Bake
    • Place pan on a baking sheet.
    • Bake 60–70 minutes, until edges are set and center slightly jiggles.
  8. Cool properly
    • Turn oven off, crack the door, and cool inside 1 hour.
    • Refrigerate at least 4 hours or overnight before serving.

Tips for Best Results

  • Use very ripe peaches for maximum flavor.
  • Water bath optional — this recipe works well without one.
  • For extra cobbler vibes, drizzle with caramel before serving.
