Parmesan Potato Wedges Recipe

Ingredients:

  • 4 large russet potatoes
  • 3 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp dried oregano (or Italian seasoning)
  • 1/2 tsp smoked paprika (or regular paprika)
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. Prepare the potatoes: Wash and scrub the potatoes. Cut each potato into wedges by slicing it in half lengthwise, then into quarters, and then into eighths (depending on the size of the potato and how thick you want the wedges).
  3. Season the potatoes: In a large bowl, toss the potato wedges with olive oil until they are evenly coated. Add the Parmesan cheese, garlic powder, onion powder, oregano, paprika, salt, and pepper. Toss again to coat the potatoes evenly with the seasonings.
  4. Arrange the wedges: Lay the potato wedges in a single layer on the prepared baking sheet. Make sure the wedges aren’t overcrowded, so they get nice and crispy.
  5. Bake for 30-35 minutes, flipping the wedges halfway through the cooking time. The potatoes should be golden brown and crispy on the outside, and soft on the inside.
  6. Finish and serve: Once done, garnish with fresh parsley (optional) for a pop of color and flavor. Serve with your favorite dipping sauce like ranch, ketchup, or garlic aioli.
