Here’s a simple and delicious oven-roasted smoked sausage and potatoes recipe that’s perfect for a hearty meal:


Ingredients (Serves 4)

  • 1 lb (450 g) smoked sausage, sliced into 1-inch pieces
  • 1.5 lbs (700 g) potatoes, diced into bite-sized pieces
  • 1 large onion, sliced (optional)
  • 2–3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt (or to taste)
  • 1–2 tsp dried herbs (like thyme, rosemary, or parsley)

Instructions

  1. Preheat oven:
    • Preheat your oven to 400°F (200°C).
  2. Prep ingredients:
    • Slice the smoked sausage and dice the potatoes.
    • If using onion, slice it into rings or wedges.
  3. Season:
    • In a large bowl, toss the potatoes, sausage, and onion with olive oil, garlic powder, paprika, salt, pepper, and dried herbs. Make sure everything is coated evenly.
  4. Roast:
    • Spread the mixture in a single layer on a baking sheet.
    • Roast for 25–35 minutes, stirring halfway through, until the potatoes are golden and tender and the sausage is nicely browned.
  5. Serve:
    • Remove from the oven and serve hot. You can sprinkle extra fresh parsley on top for garnish if you like.

💡 Tips:

  • For extra flavor, you can toss the potatoes with a splash of smoked paprika or chili flakes.
  • You can also add bell peppers or carrots for a colorful, veggie-packed version.
  • If your sausage is already very salty, reduce the added salt.
