Here’s a cozy, easy One-Pot Macaroni Cheeseburger Soup 🍔🧀
It’s creamy, filling, and made all in one pot—perfect for busy nights.

🍲 One-Pot Macaroni Cheeseburger Soup

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup milk
  • 1 cup elbow macaroni (uncooked)
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon mustard (yellow or Dijon)
  • 2 cups shredded cheddar cheese
  • Optional toppings: chopped pickles, green onions, extra cheese

Instructions

  1. Brown the beef:
    In a large pot over medium heat, cook ground beef and onion until beef is browned. Drain excess grease.
  2. Add garlic:
    Stir in garlic and cook for 30 seconds.
  3. Build the soup:
    Add beef broth, milk, macaroni, tomatoes, salt, pepper, paprika, and mustard.
  4. Simmer:
    Bring to a gentle boil, then reduce heat and simmer uncovered for 10–12 minutes, stirring often, until pasta is tender.
  5. Make it cheesy:
    Lower heat and stir in shredded cheddar until melted and creamy.
  6. Serve:
    Taste and adjust seasoning. Top with pickles or green onions if you like.

Tips & Variations

  • Extra creamy: Stir in ¼ cup cream cheese at the end.
  • Healthier: Use whole-wheat pasta and lean ground beef or turkey.
  • Spicy: Add a pinch of chili powder or mild hot sauce.
  • Too thick? Add a splash of milk or broth to loosen it.
