Ingredients:

  • 1/2 cup granulated sugar (adjust based on the sweetness of your peaches)
  • 1 tablespoon cornstarch (to thicken the filling)
  • 1/2 teaspoon ground cinnamon (optional, for extra flavor)
  • 1 tablespoon lemon juice (optional, to brighten the flavor)
  • Pinch of salt

For the Biscuit Topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 1/3 cup milk (whole or buttermilk for a richer topping)
  • 1/2 teaspoon vanilla extract (optional, for extra flavor)

For Serving (optional):

  • Vanilla ice cream or whipped cream

Instructions:

1. Prepare the Peach Filling:

  • Preheat your oven to 350°F (175°C).
  • In a medium saucepan, combine the peaches, sugar, cornstarch, cinnamon (if using), lemon juice, and a pinch of salt. Stir gently to combine.
  • Heat the mixture over medium heat, stirring frequently, until it begins to simmer and thicken (about 5-7 minutes). Remove from heat and set aside.

2. Prepare the Biscuit Topping:

  • In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using).
  • Add the cold, cubed butter to the flour mixture. Use a pastry cutter, two forks, or your hands to cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter.
  • Stir in the milk and vanilla extract (if using), mixing just until combined. The dough will be a little lumpy—don’t overmix.

3. Assemble the Cobbler:

  • Pour the prepared peach filling into a 9×9-inch or similar-sized baking dish, spreading it evenly across the bottom.

  • Make Ahead: You can prepare the peach filling ahead of time and store it in the fridge for up to 2 days. The biscuit topping is best made fresh, but you can also assemble the entire cobbler and store it in the fridge for a few hours before baking.
  • Frozen Peaches: If using frozen peaches, do not thaw them before using. Just toss them straight into the filling and bake as directed.
