Oklahoma Nut Candy (Pecan Candy)

  • 1 cup sugar

  • 2 tbsp butter
  • 1 1/2 cups pecan halves (or your favorite nuts)

Instructions

  1. Prepare the pan
    • Line a baking sheet with parchment paper or lightly grease it.
    • Set aside.
  2. Cook the syrup
    • In a medium saucepan, combine sugar, corn syrup, water, and salt.
    • Cook over medium heat, stirring until sugar dissolves.
    • Continue to cook, without stirring, until the mixture reaches 250°F (hard-ball stage) on a candy thermometer.
  3. Add butter and vanilla
    • Remove the pan from heat.
    • Stir in butter and vanilla extract carefully (it may bubble up).
  4. Add the nuts
    • Quickly fold in the pecans until they’re evenly coated.
  5. Form the candy
    • Using a spoon or small cookie scoop, drop small clusters onto the prepared baking sheet.
    • Allow them to cool completely at room temperature until firm.

Tips:

  • Timing is key: Once the sugar reaches the right stage, work quickly to coat the nuts and shape the candy.
  • You can experiment with walnuts or almonds instead of pecans.
  • For a smoother finish, stir gently to avoid breaking the nuts.
