Oatmeal Raisin Cookie 🍪

Oatmeal raisin cookies are a classic soft and chewy cookie made with rolled oats, raisins, and warm spices like cinnamon. They’re sweet, slightly chewy, and often considered a slightly healthier cookie option because of the oats and dried fruit.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt
  • 3 cups rolled oats
  • 1 cup raisins
  • Optional: ½ cup chopped nuts (walnuts or pecans)

Method

  1. Preheat oven to 175 °C (350 °F).
  2. Cream together butter and sugars until light and fluffy.
  3. Beat in eggs and vanilla extract.
  4. In a separate bowl, combine flour, baking soda, cinnamon, and salt.
  5. Gradually add dry ingredients to the butter mixture.
  6. Stir in rolled oats and raisins.
  7. Drop spoonfuls of dough onto a greased or lined baking sheet.
  8. Bake 10–12 minutes until lightly golden.
  9. Let cool slightly before transferring to a wire rack.

Tips

  • For chewier cookies, slightly underbake by 1–2 minutes.
  • For crispier cookies, bake a minute or two longer and flatten slightly before baking.
  • Substitute raisins with chocolate chips or dried cranberries for a twist.
