Oatmeal muffins

Here’s an easy, wholesome Oatmeal Muffins recipe—great for breakfast or snacks 🧁

🥣 Oatmeal Muffins

Ingredients

  • 1 cup rolled oats
  • 1 cup milk (or plant milk)
  • 1 cup all-purpose flour (or whole wheat)
  • ½ cup brown sugar or honey
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 egg
  • ¼ cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract

Optional add-ins:

  • ½ cup blueberries, chopped apple, raisins, or chocolate chips
  • ¼ cup chopped nuts (optional)

Instructions

  1. Soak oats: In a bowl, mix oats and milk. Let sit for 10–15 minutes.
  2. Preheat oven: 375°F (190°C). Line or grease a muffin tin.
  3. Mix dry ingredients: Flour, baking powder, baking soda, cinnamon, and salt.
  4. Mix wet ingredients: Egg, sugar/honey, oil/butter, and vanilla.
  5. Combine: Stir wet mixture into soaked oats, then gently mix in dry ingredients. Fold in any add-ins.
  6. Bake: Divide batter evenly into muffin cups. Bake 18–22 minutes, until a toothpick comes out clean.
  7. Cool: Let cool for a few minutes before eating.

Tips & Variations

  • Healthier: Use half whole wheat flour or reduce sugar slightly.
  • Apple cinnamon: Add diced apple + extra pinch of cinnamon.
  • Banana oatmeal: Replace sugar with 1 ripe mashed banana.
  • Freezer-friendly: Cool completely, then freeze up to 2 months.
