🍰 Old-Fashioned Oatmeal Cake
🧂 Ingredients
For the cake:

1 cup old-fashioned oats

1¼ cups boiling water

½ cup (1 stick) unsalted butter, softened

1 cup brown sugar, packed
-
½ cup granulated sugar

2 large eggs
-
1 tsp vanilla extract
-
1½ cups all-purpose flour

1 tsp baking soda
-
1 tsp cinnamon
-
½ tsp salt
-
¼ tsp nutmeg (optional)
For the coconut topping (broiled icing):

½ cup brown sugar, packed
-
¼ cup unsalted butter, melted
-
2 tbsp heavy cream or milk
-
¾ cup shredded coconut
-
½ cup chopped pecans or walnuts (optional)
🔪 Instructions
1. Soak the oats

In a bowl, combine oats and boiling water. Stir and let sit for 20 minutes until the oats absorb the water and soften.
2. Make the batter

Preheat oven to 350°F (175°C). Grease a 9×9-inch or 8×8-inch baking pan.

In a large bowl, cream together butter, brown sugar, and white sugar until fluffy.

Beat in eggs and vanilla.

Stir in the soaked oats (they should be slightly cooled).

Add flour, baking soda, cinnamon, salt, and nutmeg; mix until combined.
3. Bake

Pour batter into prepared pan.

Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
4. Make the topping

While the cake bakes, mix together brown sugar, butter, cream, coconut, and nuts.

When the cake is done, spread the topping evenly over the hot cake.
5. Broil the top

Turn on your oven’s broiler and broil the cake for 1–2 minutes, just until the topping bubbles and turns golden brown. Watch carefully—it burns quickly!
6. Cool & enjoy

Let the cake cool slightly before serving.
