Nova Scotia Blueberry Cream Cake Recipe

Ingredients:

For the cake:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 1 cup fresh or frozen blueberries (tossed in a little flour to prevent sinking)

For the cream layer:

  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice (optional, for a fresh tang)

For the blueberry topping:

  • 2 cups fresh or frozen blueberries
  • 1/4 cup water
  • 2 tbsp sugar (or more to taste)
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)

Instructions:

1. Prepare the cake:

  • Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, or line the bottom with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined—be careful not to overmix.
  • Gently fold in the blueberries (dusted lightly with flour to prevent them from sinking).
  • Pour the batter into the prepared cake pan and spread it evenly.

2. Bake the cake:

  • Bake the cake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

3. Prepare the cream layer:

  • In a medium bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, and continue to beat until fully combined.
  • In a separate chilled bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
  • If you like a little extra tang, you can fold in 2 tbsp of lemon juice at this stage.

4. Make the blueberry topping:

  • In a small saucepan, combine the blueberries, water, and sugar. Bring to a simmer over medium heat and cook for about 5 minutes, until the blueberries soften and start to release their juices.
  • In a small bowl, mix the cornstarch with 2 tbsp of water to create a slurry. Add this mixture to the saucepan and stir to thicken. Continue to cook for another 1-2 minutes until the sauce has thickened to your liking. Let it cool slightly.

5. Assemble the cake:

  • Once the cake has cooled completely, spread the cream cheese mixture evenly over the top of the cake.
  • Spoon the blueberry topping over the cream layer, spreading it out evenly.
  • If you like, you can add extra fresh blueberries on top for decoration.

6. Chill and serve:

  • Refrigerate the cake for at least 1 hour to let the cream layer set and the flavors meld together.
  • Serve chilled, and enjoy the creamy, fruity goodness!

Tips:

  • For a lighter cake: You can replace some of the butter with sour cream or yogurt for a tangier, moister crumb.
  • For a layered effect: If you want to make this into a multi-layered cake, you can slice the cake in half horizontally and add some cream and blueberry filling between the layers, too.
